Ingredients

  • 2 cups rice flour
  • 1 tablespoon baking powder
  • 1/2 cup sugar
  • 1 cup coconut milk
  • 2 eggs
  • 1/4 cup melted butter
  • 2 salted eggs, sliced
  • 1/2 cup grated cheese
  • Banana leaves for lining

Directions

1. Preheat the oven to 375°F (190°C).

2. Line a baking pan with banana leaves.

3. Combine the rice flour, baking powder, and sugar in a bowl.

4. Whisk together the coconut milk, eggs, and melted butter.

5. Mix the wet and dry ingredients until smooth.

6. Pour the batter into the prepared pan. Top with salted eggs and grated cheese.

7. Bake for 25 minutes or until set and lightly browned.

8. Serve warm with butter.
